Finca La Tobona is located in Giraldo, Antioquia, Colombia and run by Aristobulo Manco. The farm sits at an elevation of approximately 1,950 to 2,000 meters and consists of approximately 6 hectares in total. Of those 6 hectares, approximately 3 are planted in coffee with 8,000 trees of Castillo and 4,000 trees of Caturra. The coffee is fermented for approximately 48 hours in cherry, de-pulped and then dry fermented for an additional 48 hours. Upon washing, the coffee is dried in a parabolic dryer for approximately 10 days. Our importer has known and has been working with Aristobulo for several years now, but this is the first year they were able to separate out his coffee into a single-farm lot. This is an example of the hard work and difficult changes that they have asked of the producers in order to increase quality; when you have been processing coffee one way for your entire life and then are asked to change it, it’s not easy! However, the efforts on both sides of the fence has made the work in Giraldo extremely rewarding and next harvest will be their 4th year working with these producers!
