From the verdant lands of El Bosque, nestled in the vibrant vereda of Las Aguilas, emerges a coffee nurtured by the hands of Erney, a dedicated farmer whose commitment to excellence resonates in every bean.

On his sprawling 4-hectare farm, Erney tends to his precious crop without ever cutting corners. Amongst the lush terrain, approximately 1.5 hectares are adorned with the illustrious Pink Bourbon variety, standing as a testament to Erney's pursuit of quality and distinction. Alongside Pink Bourbon, Catuai, Tabi, and Catimor thrive under his watchful gaze, contributing to the rich tapestry of flavors that define his harvest.

What sets Erney's coffee apart is not just his meticulous cultivation methods, but also his commitment to traditional techniques. Employing a washed process, Erney carefully depulps each coffee cherry before subjecting the seeds to a precise fermentation process. In his open ceramic tank, nestled amidst the tranquil surroundings, the coffee seeds undergo a transformation, submerged under a delicate layer of water to ensure optimal temperature control and prevent over-fermentation. This  approach yields a cup of coffee that exudes balance and complexity, a true reflection of Erney's artistry.

As the fermentation process ends Erney's attention turns to the drying process. Upon an open, raised platform, sheltered beneath a protective plastic roof, the coffee beans bask in the gentle breeze. With meticulous care, Erney diligently rakes the beans, ensuring consistent drying and preserving the integrity of each individual seed.
